Green Principles

As an enterprise whose livelihood is largely dependent upon the weather, the seasons and the outstanding natural beauty of the mountains, reducing our impact on the environment and our demands on local resources is of paramount importance. We are committed to achieving this by: 

  • Creating winter and summer menus sensitive to seasonality and keeping food miles to a minimum

  • Aiming to recycle at least 80% of all household waste

  • Recycling all organic kitchen waste for compost

  • Supporting local producers and commerce

  • Providing home-grown herbs and salad produce from the garden

  • Collecting and recycling rain water

  • Encouraging indigenous wildlife into our garden by creating eco-friendly spaces

  • Consuming energy efficiently

  • Utilising recycled and ecological household products

  • Employing eco-friendly state-of-the-art pest control operatives
